If you 'su -' instead of 'su' to root you will inherit roots $PATH
which will include /usr/sbin and therefore 'menu' alone will work.

The documentation and faq listed that this is run by
the command "menu" but when I su to root and type menu
I receive "command not found.

Just wondering if I'm missing something obvious?
