I would suggest surfcontrol instant messaging filter if you are going to use a commercial based product. It is designed specifically to block/filter IM and P2P protocols at a corporate level. URL for more info is here: http://www.surfcontrol.com/products/im/ Runs on PIII-400 and above. 256mb ram and above Logs to SQL, and is only a 40mb download. There is a 30 day trial available. The software is able to filter content based on the proprietary network protocols the IM and P2P apps use. In addition you can also block specific IP ranges. As has already been mentioned, blocking specific ports, has always been a poor implementation of IM or P2P blocking. They also sell a web filter, for general url/host/domain type filtering, and an email filter. All of their products have hugely configurable rulesets, and I have enjoyed using them over the last few years. No I don't work for surfcontrol - just appreciate their technology and products.
