Well, I'm not able to say something about NT, but for UNIX OS' there are ipfwadm (only linux, kernel 2.0.x), ipfilter (not for linux) and ip-chains (always for linux, kernel 2.1.x). Obviously there are other "product" that can do NAT, i.e. Firewall-1 etc. Hope this can be helpfull :)
