Secure scanning into Workday

We are getting ready to implement workday, and one of the things that came
up is that our current procedures around scanning documents into Banner is
not secure.  I am curious what other schools may  have done to ensure that
document scanning into workday specifically meets best practices around
security, such as keeping PII encrypted and not storing attachments in
email.
