Info protected by FERPA sent through Email

What are people doing to protect personal identifiable information
(especially Social Security Numbers) sent through email?    What does
FERPA require?  Must it be encrypted?  Is just a password ok?  I know
very little about encrypting email.  Is this something that is easy to
do and easy for the recipient to open?
