Connecting External non-students to Campus Network

What do other colleges or universities do with external users who want to connect their computers to the network for internet access (for example a community group who might be using a conference room for a day)? How are these types of requests being handled, and handled securely in terms of the network? I know that a lot depends on how the network is configured, but let's assume a very flat network with minimal separate between the student network and administration. * Is an acceptable use policy required from the users? * Do you make them aware of Security Policy in some way? * Is there a requirement that antivirus software be installed? * What about personal firewalls? * Are there any concerns about liability should these users contract a virus from your network or be hacked by a student?
