Patrick,

Try testing the ability to perform file recovery by mounting your drive (or its image) in digital forensic software 
such as EnCase or FTK.

You might also want to look at PGP Whole Disk Encryption.  I've worked with this product and have been very satisfied 
with its end results.  IBM recently purchased enough licenses to protect its 355,000 employees:
