Skype versus Jabber

What is the best and most secure Jabber client to use as an
alternative to Skype? Do any of them support more than chat, such as
vidcon or application sharing? I really fear the fact that Skype's
encryption methods have not been peer reviewed, and obviously the many
nodes over which your information travels is also a concern.
