Thanks to everyone for responding.  I've been reading Applied Cryptography by Bruce Schneier and its
good to see that its considered the must have book on cryptography and I've added a few of the
others that everyone has suggested to my reading list.  Thanks again for all the responses. :)

Totally agree with cryptography decrypted. 3 quarters of the way through.
certainly one of the easiest books to get your head around a sometimes
complex subject.
