Greetings,

 You could just disable them.. See if that affect a system.. Then delete 
them.. Normaly account have comments that can help you locate their use.. 
Like ftp is used for your Ftp Server..

apache is the account your Web server (Apache) use etc etc..

Anything else could be deleted..
