Snort can decode the application layer of a packet and also collect packets
based on data content.
A very good (but not free) Programm is eEyes Iris. It will also reassemble
full sessions (So that you can see e.g. Mails or Webpages with
complete layout).

You will find a free, fully featured 15-day trial version here:

Subject: Application Layer Sniffer

Hello,

I've searched and searched for a packet sniffer that will provide
details on the Application Layer. Can someone please direct me to the
right location?

Any help would be appreciated!!!
