I really don't consider physically damaging the router by ripping out the console port a viable security method but sure if that floats your boat by all means destroy the router and buy a new one if you ever need to "recover" your destroyed one. /shrug
Physical access will result in root access, but if you're just trying to make things more difficult, you could pop the case open and cut the console port connections, wire each side into a custom size female connector, then make yourself a double male connector. If you ever need to re-activate the console port just insert your double male, and you're ready to go, but anyone else would have to take the time to rewire the whole thing, giving your security guys longer to catch him. Personally I think you're better off with a good lock on the door and a security camera, but thats just me.
