Thanks every one, but ignore my question. I just realised I can just define 
the LARGEFILE etc. in CFLAGS on the configure command line.

./configure CFLAGS="-D_LARGEFILE_SOURCE -D_LARGEFILE64_SOURCE 
-D_FILE_OFFSET_BITS=64"

It's a bit of a mouthful though.
