Well, an OS could presumably provide raw GASP packets to its capture mechanism for IP-over-Firewire; unlike the IP_OVER_FC, where there's no synthetic header like the one you describe, there is a synthetic header in your packets.
However, if an OS does that, I'd be inclined to go with DLT_IEEE1394 or something such as that for it, so it doesn't bother me to just call that an "IP-over-Firewire" header; any of the ones you suggest are OK with me - if nobody expresses a preference for "Firewire" vs. "IEEE 1394", or for whether it should say "Apple" or not, I'll pick one tonight and send out the name and value assignment.
