It really depends on what you need, intended applications, etc.

A thicker jacket will provide a little more protection, usually at the expense of flexibility and wire management since the thicker jacket is usually a little stiffer. This can also have the benefit of helping to prevent people from violating bend radius rules, etc...

Also, some jumpers normally come with a thinner jacket. Most anything I've seen that has an LC connector on at least one end uses a thinner jacket because the thicker jacket won't work too well with LC connectors.
