Microsoft was years behind Google in properly supporting OAuth on mobile
and IMAP, but it's definitely there.

Mac Mail, Outlook, many mobile clients, and even Thunderbird support a
variety of Auto-configuration/AutoDiscover protocols. Set them up properly
and new setups should "just work." You will have short-term pain to
reconfigure existing deployments, and your helpdesk may prefer to throw up
their hands and switch people to webmail anyway, but it can certainly be
done.
