Security Concerns of Exchange in an Academic environment

RIT is going to Exchange as their primary mail server. I have tried to address security concerns as they have arisen. I started to wonder if any other university has gone to Exchange, and what you have learned through that. There seem to be a myriad of options, with certificates, instant messaging, folders, public folders. Recently someone asked about an overlay that uses public folders called SalesOutlook. Wisdom is appreciated.
