Windows "Object Access" auditing

Hi Were looking to audit access (success and failure) for the Roaming Profiles of our management team. Wed like to exclude the user who owns the profile from auditing however, so we only see events where someone else has accessed the folder. Does anyone have any idea how to enable auditing on a folder for the Everyone group, but then to exclude a specific user from that audit policy?
