It's not a bad idea to have IPTables do some heavy-duty logging as long as you have the resources for it. Your logs are going to grow really, really, really fast if you log all drop and all accept. You'll definitely want to log IPTables to a different file as well. Think carefully how you're going to integrate your IPTables log into the rest of your logs. Do you have an IDS already setup to catch and alert stuff? Do you have a central syslog server? Did you configure other logging facilities properly (ssh, apache, etc)?
