Not sure what you mean by using tcpdump, wireshark or ethereal to do
log analysis, unless you mean pulling them off the wire in transit to
the syslog server. If you're the one setting up the server, wouldn't
imagine you'd need to do that. =-)

Tools you can use to rip and shred logs are tcpdump, wireshark, ethereal,

OSSEC is very nice. I run it and swatch on a syslog server I use,
mostly because I'd added enough rules to my swatch install I didn't
want to redo them all in OSSEC (though OSSEC has a very nice default
ruleset already configured). If you just want something to email you
about critical alerts without a lot of tuning, swatch very simple to
add alerts to...
