Personally I would look into squid as you can setup a proxy that would  
sit as a ghost on your network bu still have the ability to gather the  
information you require.

E.g. Keep your web browser to "automatically detect proxy settings"

Now as for email I never actually tested it with email but I would  
assume it would be just as effective.
