Personally I would look into squid as you can setup a proxy that would sit as a ghost on your network bu still have the ability to gather the information you require.

E.g. Keep your web browser to "automatically detect proxy settings"

Now as for email I never actually tested it with email but I would assume it would be just as effective.

In my experience it is far easier to monitor activities such as web surfing and email at a network level through the use of web proxies and email compliance services/ software.

I have used LanDesk in the past, and although the product is excellent, it is difficult to maintain across a large number of desktops when a deployment solution does no already exist.

Any solution you implement would require a "mothership" to report back to so would require the
implementation of additional infrastructure in any case.

The larger question that needs to be asked is - how many workstations are you looking at deploying
this to?
