Just completing the Nick advice, you can also install a module for
iptables to interact with snort and act as IPS, and see iptables
blocking traffic after snort detection.

You can try also some cryptographic tools, like GPG (linux) or
winpt(win) and use they public/private keys to encrypt files and send
mails encrypted between them and so on.

for ideas of products to install, it could be open
source like iptables, snort or windows applications
etc, I need simple installation so It wont get to
complicated to the studnets. they know linux very
