When you create a VPN connection, by default, all traffic goes through the gateway of the remote network, instead of your local gateway. Split tunneling sends only traffic for the remote network through the remote gateway, and the rest of the traffic goes through your local gateway. Split tunneling is generally considered insecure, however, it does/can add convenience for an end user. When I split tunnel, I can work on the remote network, but dropping and adding connections to the VPN doesn't affect my other app's, such as IM or streaming media.
