Depending on how you have your OU structure setup, this is either very easy or somewhat difficult. You can link a GPO to a particular OU. If your structure looks something like this: Domain.com -OU1 -OU2 -SubOU21 -SubSubOU211 -SubOU22 -OU3 If you link the GPO at Domain.com it will apply to all your Ous. If you link the GPO to OU2, it will apply to OU2 and all sub Ous. If you want to apply the GPO to OU2 and SubSubOU211, you have to apply it at OU2 and SubSubOU211 and Block inheritance on SubOU21. An alternative is to use a WMI filter to determine which object get the GPO. If you do a Google search on Group Policies, you will find an abundance of information.
