Nothing to do with hashes, but have you guys looked at Packeteer ? I know it is an expensive solution, but detects a lot of stuff and you can specify rules and actions for IM, bandwidth, p2p and so on. So even if it changes the port it is easy to detect and block as it looks inside the packet. Take a look
