Tips for Setting up VMWare Honeypot

I am planning to setup a honeypot using VMWare 4 and several different
Windows OS's to see what I can get infected/hacked so I can learn more about
protecting my systems.

Can I setup VMWare so that I can access the Virtual machine but the Virtual
machine can't access my system? If so, how? If I do this, do I setup a
sniffer on the Virtual machine or my system to look at the traffic?

On a related note, will a worm/virus act differently on a Virtual machine
than on a real system?
