I can't comment on the E&Y course, but I can highly recommend Foundstone's courses. I took the UH Expert course a few months back, and it was very useful, eye-opening, and a bit unnerving. It's unfortunate that my daily responsibilities leave little time to experiment with the tools we covered, but the hands-on experience and the deeper understanding of hacking techniques were definitely worth it. It sheds a whole new light on the need to enforce best security practices. Hope this helps.
