I would suggest using of the distributions tailored to suite, they come well stocked with squid, firewall IDS sometimes and more. With a nice web admin. I'd recommend IPCop or Clarkconnect from personal experience. There is a good selection here: http://www.security-forums.com/forum/viewtopic.php?t=31 You can learn the fundementals with one of these then perhaps later on build your own machine more suited to your needs using perhaps Debian or Slackware.
