Auditing and archiving internal MS Exchange email?

After sending my last email to the list regarding an appliance that would audit and archive inbound and outbound mail, 
I remembered that there is another category of email that has to be taken into account .. internal email between users 
of a MS Exchange server.

I'm assuming the email security appliances don't handle internal MS Exchange mail, or would my assumption be wrong?

Any ideas on how best audit and archive those emails, along with all inbound and outbound activity in front of the MS 
Exchange server itself?
