Exchnage 2000 can providing service Instant Messaging? Yes.
You can use IM Client that was included in Exchnage 2000 CD.
You cannot use other IM product even regular MSN Messenger from Microsoft.
Because it cannot connect to Exchange Server.

Does anyone know if There is any functionality built into Exchange 
IM for logging chat sessions? If not, is it possible to do this with 
any third party software? We don't use it yet, but are considering 
it. What are the thoughts out there about any other reputable IM software?
